Ingredients for Muffins

  • 80 g Maple syrup
  • 120 g almond flour
  • 1 Prise salt
  • 1 TL vanilla extract
  • 2 banana ripened
  • 60 ml soy milk or almond milk
  • 50 g vegetable oil
  • 4 egg whites

Almond topping instructions:

  1. Put honey and butter in a pan until ingredients melt together.
  2. Stir in planed almonds.
  3. Put about 1 - 2 teaspoons on each muffin.

Almond topping ingredients:

  • 60 g sliced, planed almonds
  • 13 g Butter
  • 1 EL honey

Muffin instructions:

  1. Beat egg whites until stiff.
  2. Crush bananas with back of a fork then stir in maple syrup, vegetable oil, soy milk and vanilla extract. Add the banana mix to the egg whites and combine with almond flour and pinch of salt.
  3. Distribute batter in muffin liners
  4. Prepare topping and spread on muffins. Then bake in a preheated oven at 180 degrees Celsius for about 18 minutes.
