Tres leches cake must be one of my favorite cakes ever. I have lactose intolerant family members who dose up on their pills, just to be able to get a slice of this cake. It is just that good.
I prepare a basic 1-2-3-4 vanilla sponge cake, soak it in heavy cream, sweet condensed milk, and regular milk. Then I cover it in a delicious meringue which I caramelize. Because of the added sweet condensed milk, I reduce the sugar amount slightly for the cake.
- 225g butter (room temperature)
- 1 3/4 cups of sugar - 350g
- 4 eggs
- 390g flour (3 cups)
- 1 cup of milk
- 3/4 pack of baking soda - 12g
- Vanilla extract 1 tsp / pack vanilla sugar, but then reduce the sugar
Tres leches milk ingredients
- 150g milk
- 100g heavy cream
- 150 sweet condensed milk
My cake pan is 34 cm long, 24 cm wide and 5,5 cm deep.
To cover the cake, I recommend a meringue or heavy whipped cream. My recipe for the meringue can be found here: http://www.keyk.de/en/blog/baking-recipes-and-ideas/caramelized-flamed-meringue-basic-recipe
