Mirror glaze (for 23 cm diameter cake - not bigger!  If I were to do another cake with 23 cm diameter, I'd use 10% more of the ingredients than below.):

  • 170g sugar
  • 200g white chocolate (best couverture)
  • 11g Agar 
  • 145g water (145g = 145ml )
  • 115g sweet condensed milk (sweetened condensed milk heat treated, 9% fat, 22% fat-content)
  • Red + white gel food color

Mousse layer used below the mirror glaze

  • 900g white chocolate
  • 400g heavy cream
  • 150g strawberries

Strawberry Jelly with agar agar (20 cm diameter)

  • 300g strawberries
  • 250g of water
  • 5 tablespoons agar
  • 1/3 cup of sugar

Cream cheese / cheesecake layer (20 cm diameter)

  • 175g fresh cheese
  • 100g whipped cream
  • 50g of water
  • 1 TL agar
  • 60g powdered sugar

Cake: 2 x 20 cm diameter vanilla cake (each 1.5 cm in thickness)
