Which cake pan is the right one?

The key success factor in making an impressive cake is choosing the right cake pan.  Here is some information to help you choose the right cake pan for your next project.

Basics:


There are three basic pans most people have stocked in their kitchen cabinet:

     1.  a spring pan,

     2.  a Bundt cake pan and

     3.  an oblong loaf pan commonly used for bread making.

For those who are not looking to become the next cake master, these basic cake pans will suffice for a lifetime of delicious cheesecakes, chocolate marble cakes and delicious brioche bread.  For those looking to experiment a bit further, there are a few more cake pans to choose from.

The cake and baking industry has advanced substantially over the last 20 years, leaving you now with more options than you can imagine.  The introduction of food grade (or food safe) silicone advanced the industry and brought with it cake pans in shapes, sizes and even colors that were unimaginable before.  You can now find silicone cake molds of your favorite Disney characters and donut molds to bake (not fry!) dime sized donuts.  So, let’s talk about the different materials of cake pans.

What material cake pan should I purchase?

How important is the material when it comes to pans and other bake ware?  In this section, we help you identify the right material cake pan for your next project.

The most frequently used material for cake pans is metal. Metal includes everything from aluminum to the cast iron cake pans you may still have from your grandma’s kitchen.  For most baking projects, metal baking pans are the right way to go.  

1) Aluminum baking pans

Aluminum cake pans have benefited from considerable investments in innovation.  One of our personal favorites are the round aluminum baking pans from Wilton (see here ).  Aluminum is known for its efficient transfer of heat, ensuring that your cake bakes evenly.  This is particularly important when you want to ice or layer cakes and rely on straight edges and angles.  They are also user friendly when it comes to cleaning, although we do not recommend placing them in the dishwasher.


2) Tinplated cake pans

Tinplated cake pans are the ones most of us have in our cupboards.  Tinplated cake pans offer the right price-to-performance ratio and are therefore the most common purchase. Unfortunately these are not good transmitters of heat and result in uneven cheesecakes and birthday cakes.  So yes, it’s not necessarily your recipe that’s at fault for that dome and crack in your cheesecake, you may just be using the wrong material cake pan.  These tinplated cake pans are not easy to clean and require a lot of buttering to ensure that nothing sticks.  You are also going to see lots of wear and tear over time.  Cleaning these cake pans is also challenging and the dishwasher is not a safe place for these pans as they are likely to rust.  

3) Cast Iron baking pan

We know of many people who swear by their cast iron baking pan.  These have been inherited from one generation to another because they are incredibly robust even for the clumsiest of all bakers.  „Antique“ cast iron baking pans can be pretty expensive.  Check out the most recent auctions on Ebay to get an idea.  At this point, we do not carry any cast iron baking pans in our inventory. 

4) Food safe silicone baking pans

This is how we check whether the silicone baking pan is safe to use: the most important trick we recommend in identifying good silicone baking pans is to press your thumb really deep into the silicone.  If you find some white plastic peaking through, your cake pan is likely NOT made of food safe silicone.  If the silicone has a strong scent, it is also not a good buy.  Food safe silicone is otherwise safe and a good choice for most of your baking projects.  Like cast iron baking pans, silicone baking pans are good for clumsy bakers who like to drop things in the kitchen.  With the added benefit that silicone does not break your tile flooring when it slips it out of your hand (in comparison to a cast iron baking pan).

Silicone is a good inductor of heat and is easy to clean. You can throw it into the dishwasher for easy cleaning.  You need to be cautious when using sharp objects to remove your cake from the pan, as these tools may tear the silicone.  Always read the instruction manual of the baking pan to ensure that you do not exceed the recommended temperature limit.  Many silicone pans are not suited for projects that require a temperature higher than 220 Celsius.  On the other hand, silicone baking pans can be placed in the freezer without any concern.  This is why you can now find a lot of cool shaped silicone molds to create ice.  Check out the engagement ring ice mold in our shop for your next bridal shower!  If the silicone pan is shallow, it can also be used to mold chocolate.

5) Enamel coated baking pans

Enamel baking pans are a fantastic choice for baking as they are dishwasher safe, very good heat transmitters, do not rust, do not show scratches and can last you a lifetime.  Good quality comes at a respective price.

6) Paper







You are wondering why paper is on this list.  Paper cupcake liners are used for small and large cupcakes.  Paper forms are also used as a single-use bread mold that can be placed into the oven.  Paper does not hold its shape when holding heavy dough, so in most instances it should be used with a secondary baking pan.  


A word on non-stick bake pans

Non-stick coating is probably the greatest innovation for all those who forget to butter or flour their cake pans.  Non-stick cake pans allow you to easily remove your baked goods from the pan with minimal breakage and makes the cleaning process much easier. Non-stick cake pans should be treated with the same care as silicone molds when it comes to sharp knives and cleaning tools.  These can create scratches and destroy the coating.  The non-stick coating may be a health-hazard if it chips into your food.  Exercise caution.

Shapes and Sizes

We talked a considerable amount about different materials for cake pans but have not talked about the variety in shapes.  

Here are the most frequently used shapes of cake pans:

         -   Circular cake pans ranging from an 8 cm diameter to 40 cm diameter,
           -   rectangular cake pans, and
             -   semi-sphere cake pans to create cake soccer balls and other types of balls.

        The US based company Wilton has introduced a whole range of cool, innovative cake pan designs including:

               -   cake pans in the shape of a horse’s head,
                 -   cake pans in the shape of a princess’ dress,
                   -   adjustable cake pans to create a single letter or number,
                     -   Castle designed cake pans,
                       -   Donut shaped cake pans,
                         -   Snowflake cake pans and the list goes on.
